COOK TIME: 90 mins


  • Oil 2 tbsp
  • Carrots 1 ½ cup
  • Raisins 1/4 cup
  • Sugar 1 ½ tbsp
  • Almonds (blanched + peeled) 10-15
  • Cashew nuts 10-15
  • Ghee 1 cup
  • Onion (sliced) 1 ½ cup
  • Mutton (mix) 1 kg
  • Salt to taste
  • Chicken boneless (cubes) 1 kg
  • Cream 1 cup
  • Oil 2 tbsp
  • Yogurt 1/4 cup
  • Ginger garlic paste 1 tbsp
  • Salt to taste
  • White pepper powder 1 ½ tsp
  • Cumin seeds (roasted & crushed) 1 tsp
  • Dry coriander (roasted & crushed) 2 tsp
  • Almond paste (8-10 blanched & peeled almonds + 3 tbsp water) 2 tbsp
  • Green chili paste 3 tbsp
  • Lemon juice 3 tbsp
  • Fresh Coriander (chopped) 1/2 cup
  • Oil (for frying) 2 tbsp
  • Oil (for coal) 1/2 tsp


  1. In a pan heat oil, add carrots and sauté for 1 minute. Then add raisins and sauté for 2 minutes. Add sugar and cook until sugar is caramelized. Lastly add almonds and cashew nuts and cook for 1-2 minutes. Take off flame and set aside.
  2. Heat ghee in a deep pot, melt it and add slices onion. Cook until they turn light golden brown in color. Add mutton pieces and cook for 7-8 minutes or until meat changes its color. Add salt and mix well.
  3. Add 10 cups of water, bring it to boil, cover with lid and let cook for 40 minutes or until meat is tender.
  4. Take the meat out of the stock and make or reduce the stock to 6 cups over medium heat. Add soaked rice, give a good mix and cook until 80% water is evaporated.
  5. Add boiled meat and caramelized nuts. Cover with lid and cook on low flame for 10-15 minutes. Take off the flame, your Kabuli Pulao is ready.
  6. In a bowl add chicken, cream, yogurt, ginger garlic paste, salt, white pepper powder, crushed cumin, crushed coriander, almond paste, green chili paste, lemon juice, fresh coriander. Mix well and marinate for 2-4 hours or overnight.
  7. Now thread 6 pieces into soaked wooden skewers and set aside.
  8. Heat oil in a pre-heated pan and place your malai boti skewers in it. Cook each side for 2 minutes or until fully cooked.
  9. Now turn off the flame, place foil cup, burning coal in the pan. Add few drops of oil and cover with lid for 3-4 minutes.
  10. Your Malai Boti Skewers are ready, serve with Kabuli Pulao.
